We went to my sons girlfriends family for Thanksgiving this year. We were ask to bring mashed potatoes for 18, rolls and anything else we wanted to bring. So I looked for a new recipe. Here is what I found. It is from HSB front porch and its a keeper!
Praline Sweet Potatoes
4 cups of mashed sweet potatoes
1/2 cup of white sugar
2 Tbs. vanilla extract
4 eggs
1/2 pint heavy (whipping) cream
1/4 lb. butter
1 cup packed brown sugar
1/2 cup flour
1 1/4 cup chopped pecans or walnuts
I whipped the sweet potatoes with my mixer till they were fluffy then add sugar, cream, eggs and vanillia and mix well.Pour into 9 by 13 or similar casserole.
Mix butter, flour and nuts. This is a dough consistancy. Put on top of the casserole and press down slightly. Bake at 350 about 40 minutes or untill set. ( no longer jiggles)
This recipe can be a side dish or dessert. It is fabulous!
The second recipe is Mashed Potatoes. I wanted something different that what I usually do. ( butter milk salt and pepper)
Here is my new recipe. ( not a diet recipe!)
8lbs russet and white potatoes ( if I could afford yukons that would be best)
1 cup butter melted and warm.
2 cups whipping cream, warmed
2 tsp salt
pepper
Peel and cut potatoes in uniform chunks, boil till just tender. Do not over cook. Strain. Using mixer whip the potatoes until smooth. I had to do this in two batches.
Beat cream till it starts to thicken. Add butter, cream, salt and pepper to potatoes and mix in by hand untill all in mixed well.
These potatoes will be very smooth and creamy. They are delicious all by themselves without gravy!
I made those exact recipes for Thanksgiving too! The praline sweet potatoes was really light and fully. not too sweet. I was surprised at how light they were.
ReplyDeleteBut I had to laugh, you and I must have been thinking the same thing on the potatoes. Because I wanted something different and more decadent, I also used real butter and whipping cream. Yum! (I"m just ignoring the fat grams<grin>
Thanks for sharing the sweet potato recipe. Sweet potatoes don't go over very well in my family, but maybe they will with this recipe.
