In the Kitchen


We were all really yearning for something sweet this week. This yummy custard is made with simple ingredients and it quick to put together.It does not get the beautiful award though! The pie is not pretty after it is baked.

Creamy Custard Pie
This is a creamy sweet treat that forms its own crust. If you are counting calories...skip it!
1/4 cup butter ( use the real stuff, indulge)
4 eggs
1/2 cup sugar
1 cup milk
1 can sweetened condensed milk ( yep this is a rich dessert!)
1 Tablespoon vanilla
1/2 cup flour
Put all ingredients in a blender and blend until very smooth. (If you think you have blended it enough...do it again. )
Pour into a greased 9 inch pie pan

Sprinkle top with cinnamon, or pumpkin pie spice or apple pie spice.
Bake at 350 or until set in the middle.  It will be quite dark when it is finished. The key is to take it out of the oven before it is completely finished. A tad wobbly in the middle is okay. The pie will have raised edges and the middle will be sunken. As it cools the edges fall. Cool and Chill ( can be served warm)

Crock Pot Baked Spaghetti
This is a last minute late in the day ( oops I forgot to plan dinner) meal,
1 28 oz can your favorite spaghetti sauce
1 29 oz can diced tomatoes, pureed juice and all in the blender
1lb meat lightly browned and drained ( ground hamburger, turkey, chicken; kielbasa, Italian sausage)
Salt, pepper, Italian spice mix, garlic to your taste.
Combine the above in a bowl
You need enough shredded cheddar ( or combo of cheddar and mozzarella) for 3 layers in the crock pot. ( no I did not measure....sorry)
1 lb uncooked spaghetti noodles broken into small pieces
Start your layering with the sauce mixture, noodles and then cheese. Press the last layer down making sure all noodles are under the sauce and cheese.


Cook on low for 2 1/2 hours. ( note: You need to know your crock pot. Mine cooks hot on low.)
Meanwhile prepare some french bread and pop in in the oven just before the crock pot is done.
 
It is the last day of October. This rose has stood pretty through  Hurricane Sandy, cold nights and cloudy days. My son gave me the bush for Mothers Day this year. Shortly after planting it the bush almost died. I pruned it way back and gave it special food. It struggled all summer. However by Fall it began to recover. This single bloom is a bright spot in our yard.

  2. I have been scanning your latest posts and there is a lot of yummy things coming out of your kitchen! I have to think of a grain free idea for the crockpot spaghetti. Hmmm maybe just make the sause and have some spaghetti squash ready. [o=
