Crock Pot Fall Pork Chops

This recipe is good for the ends of the pork roast. We buy very large pork loin and divide it into packages of pork chops. The ends are always kinda funny shaped and usually used for stir fry or crock pot stuff.

6 boneless pork chops (trim the fat)

½ cup brown sugar

½ cup ketchup

2 Tablespoons lemon juice

2 Tablespoons water

1 apple peeled and cut into large chunks

 Place pork chops in the bottom of the crock pot.

Mix all other ingredients in a small bowl. Pour over pork chops.
Before Cooking
 Cook on Low 5 hrs.
Serve with rice or noodles.
Done! Not a beautiful presentation however the smell and the taste are devine!
   
Apple Muffins
 Nothing speaks of fall like apple muffins! The smell is awesome.
Lightly oil 12 cup muffin pan.
Heat oven to 375 degrees
 Batter
2 cups flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
½ cup oil
1 cup sugar
2 eggs
1 ½ teaspoon vanilla
2 Tablespoons water
2 large apples, peeled, cored, and finely chopped.
In a medium bowl mix all dry ingredients. In a large bowl mix all the wet ingredients. Add wet ingredients and mix till it just comes together. Add apples.
Using an ice cream scoop put mixture into prepared muffin tins.
 Topping
1/3 cup brown sugar
1 Tablespoon flour
½ teaspoon cinnamon
2 Tablespoons butter, melted
Mix all ingredients and top each muffin prior to putting into the oven.
Bake for 20 minutes. Allow to cool at least 10 minutes before removing from tins.
Cool on a wire rack.
I added some of our homemade granola to the top of some of the muffins. I am sure you could add any kind of nut as well.

  1. Both look delish!!!!!! Of the fall favs....I am not a fan of pumpkin, but glad apple season is here too. I love apple stuff. Those look soooo yummy!!!!
