Menu for the Week

Posting a menu holds me accountable to be prepared in advance thus helping to save money and frustration.


Monday


Hamburger Pie, Fruit, Cheese Bread


  Hamburger Pie


1 medium-size onion, chopped


1 pound ground beef


salt and pepper


can of cream of mushroom soup


1 can green beans


5 medium potatoes


1/2 cup milk


1 egg, beaten



Brown onion in hot fat; add meat and seasonings; brown. Add drained beans and soup; pour into greased casserole. Mash potatoes; add milk, egg, and seasonings. Spoon in mounds over meat. Bake in moderate oven (350°F)


Tuesday


Baked Chicken Strips, Rice, Veggies, Fruit, Rolls

Wednesday


Kids eating at Church  ( taco night) ...so we will eat leftovers.



Thursday


Spaghetti, green beans, french bread, fruit


Crockpot Spaghetti Sauce



    2 tablespoons olive oil
    2 onions, chopped
    4 teaspoons minced garlic
    2 green bell peppers, sliced
    2 stalks celery, sliced
    3 pounds ground beef
    2 carrots, diced
    1 cup mushrooms, sliced
    1 can (28 ounces) tomato sauce
    3 cups water
    1 can (28 ounces) stewed tomatoes, undrained
    1 tablespoon dried oregano
    2 tablespoons minced parsley
    2 teaspoons salt
    2 teaspoons black pepper
    1 tablespoon sugar
    1 pound dry spaghetti



Directions





Heat oil in large skillet over medium-high heat until hot. Add onion, garlic, bell pepper and celery; cook and stir until tender. Place mixture in slow cooker. In same skillet, brown ground beef. Drain and add to  slow cooker.


Add carrots, mushrooms, tomato sauce, water, tomatoes with juice, oregano, parsley, salt, black pepper and sugar to slow cooker. Cover; cook on LOW 6 to 8 hours or on HIGH 3 to 5 hours.


Cook spaghetti according to package directions; drain. Serve sauce over cooked spaghetti.


 


Makes 8 to 12 servings


Friday


Meatball Subs ( with leftover spaghetti sauce), veggies, fruit, rolls


Basic Meatballs


1 lb beef, ground


1 large egg


1/4 cup onion, finely chopped


1/3 cup italian herbed breadcrumbs


1/4 cup milk


1 teaspoon worcestershire sauce


salt & freshly ground black pepper, to taste


Directions


Mix all the ingredients together.


Shape mixture by Tablespoonfuls into 1 1/2-inch balls.


Place the meatballs in a lightly greased 13 X 9 X 2 or 15 1/2 X 9 1/2 X 1-inch baking dish and bake, uncovered, in a 400 degree oven until light brown, about 20-25 minutes.

Cheesy Chicken Enchiladas, Salad,
