Whats for Dinner?


Lets face it we are all good cooks! Sometimes we need new ideas to spark our creative juices.  We all like to save money and time. Thats where this meme comes in. Planning a week ahead "Whats for Dinner" will give you freedom! You can post your whole weeks menu or just a favorite for the week and glean new ideas. I hope you will join in on the fun! Join anytime during the week.


Here is our dinner menu for this week. One day will be leftovers. If there are not enough leftovers we will have pancakes. waffles or french toast for dinner.


We usually serve 2 veggies and at least one fruit with the evening meal. All depends on whats on sale and whats in season.



Honey Baked Chicken


This is a finger licking good recipe!


Serve with noodles. carrots, broccoli, tangerines


2lbs Drumsticks or thighs


2 T butter


2 T olive oil


½ c flour


1 ½ t adobo or favorite season salt blend


1/8th t pepper


1/3 c honey


¼ c brown sugar


4 T lemon juice ( I use fresh squeeze orange juice)


2 T soy sauce


Mix flour and seasoning in a food storage bag or container with tight lid. Toss in chicken and shake till coated.


Melt butter and oil and pour onto a baking sheet. Lay pieces of chicken on sheet. Coat both sides with oil mixture.


Bake at 350 for 30 minutes.


In a sauce pan cook honey, brown sugar, lemon juice and soy sauce till bubbly. Coat chicken with mixture and cook chicken 40 minutes longer. It will burn easily at this point. Watch it closely.


Pineapple Pork Tenderloin in the Crockpot


Serve with rice, tropical fruits, ( comes in a can: pineapple etc)

I used : Fresh broccoli, snap peas, carrots, celery and fingerling potatoes on top of the roast because that is what I had. I also omit the cornstarch.


Teriyaki burgers


Serve with a salad and grapes


1 1/4 to 1 1/2 pounds lean ground beef


2 slices of bread, crumbled


1/4 cup finely chopped onion


2 eggs, slightly beaten


1 1/2 tablespoons sugar


3 tablespoons soy sauce


1/4 cup water


1 clove garlic, finely minced


1/8 teaspoon ground ginger


Combine ground beef and remaining ingredients in a large bowl; blend well. Shape beef mixture into 6 patties. Broil for 10 to 15 minutes about 5 inches from heat, turning once.


Macaroni and Cheese  ( awesome comfort food)


Serve with greenbeans, salad and apples


       2 cup macaroni


2 cup milk


1/2 teaspoon salt


4 tablespoons flour


4 tablespoons fat (butter preferred, but use solid fat, bacon drippings, lard, etc. - melt before adding)


1 teaspoon salt


1/2 teaspoon pepper


1 teaspoon dry mustard


2 cup grated cheese


dry bread crumbs


Preheat oven to 400°.


Cook the macaroni until al dente, drain, and place in a casserole. Mix together the milk, salt, flour, and fat and cook in a double boiler until thick. Add the salt, pepper, dry mustard, and grated cheese, mix well, and heat stirring until the cheese is melted and well blended in. Pour over the macaroni in the casserole, sprinkle the top with dried bread crumbs, and bake for 15 minutes.


Crockpot Spanish Rice ( easy!)


Serve with pintos, corn, tortilla chips, salad, tangerines


1 to 1 1/2 pounds ground chuck or turkey


1 medium onion, chopped


2 cans  chopped stewed tomatoes (15 oz each)


1 can mild green chiles (4 oz)


1/2 cup chopped green bell pepper


1 envelope taco seasoning mix


1 cup raw rice


Brown the ground beef with chopped onion; drain. In a 3 1/2-quart (or larger) slow cooker/Crock Pot, combine the meat mixture with the remaining ingredients. Stir well. Cover and cook on low for 5 to 7 hours.




Meatloaf Muffins


Serve with mashed potatoes, broccoli, carrots, fruit


1lb ground beef ( like to use half beef half turkey)


1 cup canned tomatoes


4T ketchup


2T milk


1 cup seasoned bread crumbs


1 large egg


3 T Worcestershire Sauce


1t salt


1t pepper


1T apple cider vinegar


6 T brown sugar


Combine all ingredients in a bowl except 1 T Ketchup, the vinegar and the brown sugar. Fill 12 muffin tins with the meat mixture. Mix the remaining ingredients together and spoon over muffings. Bake at 350 for 20 to 30 minutes.

  2. Your recipes always sound great to me. I am going to be trying some of these soon.

    I wish I could get organized with menu planning again. It doesn't help that hubby is out of town so much or that I never know who will be at home for supper.

    I am especially happy about that crock pot link. I love to throw things in the crockpot before church and have dinner ready when we arrive home.
