Shouldn't the Kitchen be More Comfy?

I spend a lot of time in my kitchen. Wouldn't it be great if there was a couch in there? A nice footstool for tied feet? Some music?  Perhaps in my dream kitchen!
This week I am sharing two favorites from my kitchen.

Homemade Chicken Nuggets
2 large chicken breast ( I remove the fat and ligaments)
1 cup flour
1 packet ranch seasoning mix or a blend of your favorite spices ( I often use what ever is on hand from BBQ spices to Italian depending on the side dish being served )
salt and pepper to your liking
oil for frying
I cut the chicken into square like chunks ( easiest to do when still slightly frozen. I like to use kitchen scissors to do this. Works great.)


 Put all the ingredients except the oil in a zip lock bag. ( including the chicken). Do this at least 1 hour before frying. Shake very well. Allow to sit. Shake well at least one more time before cooking.
 Fry in oil. Begin by heating the oil till it begins to bubble. There should be room in the pan for all pieces to fit snugly. The oil should only come up to slightly less that half the depth of the chicken.
 Turn heat down to med high. Cook on each side about 7 minutes. Do not turn before the time is up! Let it brown!
 Finished product. ( almost forgot to get a photo before it was all gone) This is a small batch meant to serve 5 people 4 nuggets each.
 
 
Peanut Butter Cookies.

 
 
3/4 cup peanut butter
1/2 cup butter
1 1/4 cup packed brown sugar
3 Tablespoons milk
1 tablespoon vanilla
1 lg egg
Cream above ingredients together in a large bowl.
1 3/4 cup flour
3/4 teaspoon baking soda
3/4 teaspoon salt
Mix above ingredients together and add to wet ingredients and mix well.
Drop by tablespoonfuls onto an ungreased cookie sheet 2 inches apart. Flatten with crisscross using a fork.
Bake in a 375 degree over for about 8 minutes.
Allow to cool 5 minutes before removing from baking pans. Place on paper to cool. ( brown paper bags work great)

    I LOVE peanut butter cookies!!!!!!! They are my fav!!

  2. I have a feeling that even if there were a sofa in the kitchen, neither you nor I would be sitting on it much with all the cooking to do! Ha! These nuggets would delight my kids. Thanks!
