Show and Tell Friday

I found a great blog this week. It has recipes for 200 calories per serving or less. http://dietrecipesblog.com/   Since I have lost 28lbs I really want to make sure it stays off. So changing the way I cook is very important. This gal has fabulous recipes from scrumptious desserts to main meals that are healthy!


We tried this recipe yesterday and really loved it! ( even the picky eaters). It was easy to prepare ahead. I served it with left over noodles , green beans crossant rolls, and fruit. Normally would serve it with rice or rice noodles/mixed veggies. I don't eat the noodles. I ate mine with pineapple and green beans to ensure the calorie count was at 300 or below. ( I eat 6 300 calorie or less meals each day) 


Mahogany Chicken recipe - 186 calories


Ingredients:
2-3 large boneless skinless chicken breasts ( I buy huge boneless breast. 2 feeds our family of 6)
3 tablespoons Dijon mustard  ( I did not have dijon just used regular)
3/4 cup coffee
1 tablespoon honey ( we prefer the taste of brown sugar)
1 garlic clove, minced ( I used 1/4 tsp granulated garlic)
3 tablespoons lemon juice ( we are going to try orange juice next time or pineapple juice)
1/2-3/4 cup water
1/4 teaspoon salt and pepper


I added 3 Tablespoons of soy sauce, would have added ginger if I had some



Preparation:
1. Mix all the ingredients with the chicken breasts and place in a ziplock bag. Refrigerate for about 8 hours (or overnight).
2. Preheat the oven to 350 degrees F.
3. Remove the chicken from the marinade and place it in a shallow baking dish. Pour the marinade in a bowl, thin with just a bit of water, and pour over the chicken.
4. Bake, covered, for about 20 minutes; uncover and baste. Return to the oven and bake uncovered, basting again once, until done.


Servings:( ours actually served 6 portion sizes with no leftovers using two large chicken breast)

Calories: 186
Calories from fat: 19
Total fat: 2.2g
Cholesterol: 68mg
Sodium: 331mg ( this would be higher because of the soy sauce)
Total carbs: 13.2g
Dietary fiber: 0.9g
Protein: 28.4g

  5. The flavours in that are very interesting, I'd have never thought of coffee with chicken. I just might give it a try!
