Whats for Dinner?

 



 


Theme for the week seemed to be cook outside and quick and easy! We love to grill. Its great to sit outside and catch up on the day with everyone.


 


Sunday:  BBQ Ribs and Cheesy Potatoes, mixed veggies, salad.


We use a simple rub on the ribs. ( garlic, salt, pepper, paprika). End with brown sugar the last 15 minutes of cooking. Cook slow! 


Cheesy Potatoes This recipe is from Pam’s blog: http://momsmutterings.blogspot.com/  Great comfort food! A southern thing!  These are good hot or cold and can be made ahead.


Ingredients:
9 medium potatoes (about 3 pounds)
1 package (16 ounces) process cheese, cubed (Velveeta)
1 cup chopped onion
2 cups mayonnaise ( I only used 1 cup)
1/2 pound bacon, cooked and crumbled, divided ( we used a whole pound!)

Directions:
Cook potatoes in boiling salted water until tender. Drain and cool. Peel and cube potatoes; combine with cheese, onion, mayonnaise and half of the bacon in a large bowl. Spoon into a 13-in. x 9-in. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 50 minutes or until the top begins to brown.


Monday: Leftovers


Tuesday: Hamburgers and Hotdogs on the Grill


Wednesday: Grilled Pork Chops, Mashed Potatoes, Broccoli, Green beans, Honeydew Melon


Thursday: Mexican Feast


Mini Tacos with all the fixings ( lettuce tomato, taco meat, refried beans, cheese, ect), cornbread, bananas.


Friday: Leftovers


Saturday: Graduation Celebration at a friends house. BBQ etc.
