Favorite Fall Desserts

Around our house fall is not offical until the first loaf of pumpkin bread in baked. Today must be the day!
Here are some of our favorite fall desserts.

Pumpkin  Bars

2 cups flour
1 1/2 cups brown sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/4 tsp. salt

Mix Dry ingredients in bowl. Then add:
1/2 cup oil
1/2 cup apple juice
2 cups canned pumpkin
2 eggs
Beat with hand mixer until smooth.

 Bake in a greased and floured jelly-roll pan on 350* for 25-30min.
Frost with cream cheese frosting:
8 oz. cream cheese
1 stick of butter
dash of salt
1 Tbls. vanilla
powdered sugar and milk as needed for consistency
 
 Pumpkin Crunch

1 can pumpkin
1 can sweetened condensed milk
3 eggs
1 tsp cinnamon
½ tsp sugar
1 box spice cake mix
½ cup chopped nuts*
1 cup melted butter
whipped cream (for topping)

In a large bowl mix the pumpkin, milk, eggs, sugar, and cinnamon. Pour into a greased 9x9 cake pan. Sprinkle cake mix over the top of the pumpkin mixture and sprinkle with chopped nuts. Pour the melted butter over all. Bake at 350ยบ for 40 minutes or until toothpick comes out clean. Cool and top with whipped cream. Serves 9.

Pumpkin Bread

3 ¾ cup flour
2tsp baking soda
2tsp cinnamon
1tsp salt
1tsp nutmeg
½ tsp ginger
½ tsp cloves
1 cup butter ( oil or margarine will also work)
2 cups sugar
2 eggs
1 ½ cups pumpkin
Mix dry ingredients well
Mix all wet ingredients well ( in separate large bowl)
Combine dry ingredients with wet ingredients. Mix very well.
Put into 2 oiled and floured loaf pans.
Bake at 350 for one hour
Let cool completely before removing from pans. Wrap well. Store in fridg or freeze for later use.
Best if allowed to sit a day or two.

Apple Cake

2 eggs
1 cup vegetable oil
2 cups white sugar
2 teaspoons ground cinnamon
½ teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
4 cups apples - peeled, cored and diced

Preheat oven to 350°. Grease and flour one 9x13 inch cake pan. In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well. Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan. Bake at 350 ° for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

  1. YUM!!!! I have been in a baking mood!! We are still out of the RV, but I have many ideas for when I get back to my oven....I want pumpkin and apples baked things!! Fall is my favorite!
